Documentary Filmmaker Morgan Spurlock of Supersize Me fame, chose CCD Innovation to create the ultimate fried chicken sandwich for a QSR pop-up concept. Spurlocks’ big ask: Can fast food be healthy?
Approach
The CCDI team lead Spurlock on a multi-day, dynamic and in-depth Northern California trend tour of national fast-food concepts and local premium QSR concepts to understand and taste the competitive landscape of fried chicken sandwiches. With a clear understanding of project goals, a Chefs’ Council® ideation session was conducted where 6 curated chefs were chosen to help ignite creativity and push thinking. Compelling insights were gained from a deep dive into the implications of various breadings, frying methodologies, carriers, condiments, and produce accompaniments. The final step was creating prototypes of a “healthy” fried chicken sandwich that were delicious, trend-forward, visually appealing, and had a marketable health halo.
Results
CCD Innovation delivered a delicious Fried Chicken sandwich prototype that was featured as the key product offering in Morgan Spurlock’s Holy Chicken Pop-up. Due to the success of the product and QSR concept, Morgan Spurlock is planning on launching Holy Chicken brick and mortar concepts nationally.
